Citrus and Arugula Salad

Ingredients
  

  • 1 cara cara orange
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp white wine vinegar
  • 1 tbsp honey
  • salt and pepper
  • 2 cups arugula
  • 2 tbsp pepitas
  • 2 tbsp feta

Instructions
 

  • Segment the orange to create 10 beautiful slices to top your salad. Set aside. Squeeze you leftover cut up orange chunk into a mason jar. TIP: Check out the link below the recipe on how to segment an orange.
  • In the mason jar, add olive oil, lemon juice, white wine vinegar, honey, salt, and pepper. Put the lid on, shake vigorously, and taste for seasoning.
  • In a medium bowl, toss arugula with just enough dressing to coat the leaves. Extra dressing will keep in the fridge for about a week. Arrange on 2 plates. OPTION: if you want to be extra fancy, chill your plates in the fridge for a couple minutes before serving.
  • Arrange orange segments to create a star on top of the greens. Sprinkle salads with pepitas and feta. Add a final grind of fresh cracked pepper before serving.
